He also completed a new winery in time for the 2013 vintage that now enables him to work with temperature control and to gain a very gentle extraction of tannins for all his wines. They are wines which are often very seductive at a young age which also clearly have the potential for ageing superbly. This needs to develop a bit more depth but it is already a quality effort. He made his first vintage in 1956. His domaine covers only 6.5 ha., mainly planted with Grenache that counts for about 90% of the blend added with small amounts of Mourvèdre, Counoise and Vaccarèse. He feels Syrah is not suited to Châteauneuf-du-Pape and he also distrusts new clones and does not like vines that are over 50 years old finding 30 to 50 years to be ideal.\u003c\/p\u003e\n\u003cp class=\"\"\u003eUp to 5 different red wines are produced here depending on the vintage and the evolution of the wines.  His decision about cuvées is taken several years after the harvest - just before bottling. The blend of the four cuvées and the treatment in the cellars are not differing. With 13 different plots the largest is situated in La Crau with another situated in Grand Pierre beside Rayas and it's probably from these vineyards the best cuvées are selected. Bonneau also has 3.5 ha of vines west of the Rhone in the Gard which goes to make his similarly styled vin de table \u003cem\u003eLes Rouliers\u003c\/em\u003e which is usually a blend of 2 vintages and which can also contain some de-classified Châteauneuf-du-Pape.\u003c\/p\u003e\n\u003cp class=\"\"\u003eThe vinification and ageing of the wines is in fact very simple. When the fermentation in cement tanks is finished the wine goes into a mixture of foudres, demi-muids and small old barrels from Burgundy. Here it stays until Bonneau finds it ready to be bottled - maybe after 6, 8 or 10 years. The grapes are rarely de-stemmed and the wines are fined with egg whites before bottling. Henri Bonneau's ageing cellars are from the 17th century and are legendary. You can't find a barrel there less than 10 years old and most of them are very ancient. When you walk around these tiny cellars you feel you are visiting a museum. A rush of generous inky blackberry jam, spice, graphite and leather conveys superb textural intensity. Time in the glass helps the aromatics come alive. Shockingly rich and voluptuous, the 2001 is also wonderfully open today. Uncharacteristically so for Las Cases, in fact. But who's complaining? Certainly not me. Even so, the 2001 is ultimately a mid-weight Las Cases, with plenty of opulent fruit, but not quite the tannic heft that is such a signature of this reference-point St. Julien. Readers lucky enough to own the 2001 are in for a real treat. This is an especially fine bottle, perhaps the finest I have come across. In the 1960’s some limestone terroir on the western edge of the appellation was planted to white varieties which are perfectly suited to limestone and give whites of great freshness and purity. The entire winery has been completely renewed and is now naturally climate controlled utilising the water which lies deep below the clay plateau. From this water, cool air spills down into the winery cooling every level so that the whole winery retains a very cool temperature with natural humidity. Rows of oak barriques have replaced the old large foudres of yesteryear, and large temperature controlled stainless steel vats now line the walls, resulting in wines of freshness and finesse in both red and white wines.
